Several years ago, we travelled through the mountainous regions of Northern Thailand, driven by curiosity and a love for real coffee. What we found was more than just fertile land – we discovered people with passion, villages with stories, and families with generations of experience in growing some of the world’s most unique coffee.

Coffee from Doi Chang and Doi Thep Sadet is hand-picked and cultivated using sustainable farming
practices — a clear selling point. The beans undergo careful processing, whether washed, natural, or
honey-processed, ensuring the highest quality in every cup.

Cherry Selection
Fully ripe coffee cherries are harvested by hand. They are then poured into a water tank to be cleaned and to separate only the fully developed beans.

Green Coffee Processing (Hulling)
Hulling is the process of removing the dry outer husk or parchment layer from dried coffee beans. This step is done after the beans have been properly dried, resulting in green coffee beans ready for further processing, such as grading and roasting. The hulling machine efficiently separates the husk from the bean while minimizing damage to the coffee seeds.
Sun-Drying Coffee Cherries
The coffee cherries are sun-dried for approximately 7–8 days. During this time, they are turned regularly to ensure even drying and consistent moisture evaporation.

Coffee Roasting
Our carefully graded green coffee beans are roasted using professional-grade automatic roasters to bring out their full aroma and flavor.
Once roasted, the beans are packed in four-layer foil bags with one-way air valves — ensuring freshness and preserving their rich aroma all the way to your cup.
